How to Know When Honey Is Ready to Harvest
Knowing when honey is ready to harvest is one of the most important skills you’ll develop as a beekeeper. Harvest too early and you’ll end up with honey that ferments. Wait too long and you might miss your window entirely. The good news is that bees give you clear signals—you just need to know what to look for.
The Capped-Frame Test
The most reliable way to know if honey is ready is to look at how much of the frame is capped. Capping is the thin layer of beeswax that honey bees seal over finished honey to preserve it. When you pull a frame from the hive, hold it up to the light and look at both sides.
If 80% or more of the frame is capped, that honey is ready to harvest. You don’t need 100% capped—bees often leave small patches uncapped, and that’s fine. What you’re looking for is that the vast majority of the frame is sealed with white or light tan wax.
Why does this matter? Capping is the bee’s way of saying “this honey is done.” Bees only cap honey when the moisture content has dropped to around 17–18%, which is the sweet spot for long-term storage. If you harvest frames that are less than 70% capped, you’re likely pulling honey that’s still too wet.
In practice, walk through your hive about three weeks after a strong nectar flow—the period when a large number of flowers in your area are blooming and bees are bringing in significant amounts of nectar. Pull a frame from your honey super (the box or boxes placed above the brood nest specifically for honey storage). If most of what you see is capped, mark that frame. Come back a few days later and check again. When you have several frames that are mostly capped, you’re ready to harvest.
One note: don’t get hung up on finding frames that are perfectly, completely capped. Real beekeeping doesn’t work that way. Aim for “mostly capped” and you’ll be fine.
The Shake Test
The shake test is a quick field check that takes about ten seconds. Hold a frame horizontally over the hive and give it a firm shake side to side. If honey flies off the frame, it’s not ready. If the honey stays put, it’s ready.
What you’re testing is whether the honey is thick enough to stay in the cells even with movement. Uncapped honey is thinner and will literally shake loose. Ripe honey is thick and viscous—it sticks to the comb.
This test works because ripe honey has low enough moisture content that it’s become dense and sticky. Unripe honey is still relatively thin and watery, so it moves around inside the cells.
The shake test is useful as a secondary check, especially if you’re unsure about capping or if you’re harvesting mid-season when the flow is still active. It’s not a replacement for the capping test—some beekeepers rely on it too heavily and end up harvesting honey that ferments later. But combined with the capping test, it gives you confidence.
One practical tip: do the shake test over the hive so any honey that does shake loose falls back into the box. And don’t be too gentle. A real shake, not a timid wiggle, is what tells you something.
Moisture Content and Why It Matters
Honey’s moisture content is what determines whether it will stay stable or ferment. The target is 17–18% or lower. Above roughly 18.6% moisture, honey becomes vulnerable to fermentation, especially in warm conditions. Bees know this instinctively and won’t cap honey until it’s dry enough.
The capping test and shake test are reliable enough for most beginners’ purposes. But understanding the “why” helps you make better decisions. If you want to go further, basic refractometers for measuring honey moisture are widely available and inexpensive, and many experienced hobbyists find them worth having.
When nectar comes into the hive, it contains a high percentage of water. Bees spend days fanning it, breaking it down with enzymes, and moving it between cells to evaporate water. Once the moisture drops to around 17–18%, they cap it. This is the point where the honey is shelf-stable and won’t ferment under normal storage conditions.
If you harvest honey that’s still 20–25% moisture, it might look and taste fine for a few weeks. But in a warm room or over months, wild yeasts can activate and fermentation begins. You’ll see bubbles, smell alcohol, and the honey will become unusable.
The timing of your harvest matters too. Early-season honey from a light flow takes longer to ripen. If you’re harvesting in June, be extra cautious about capping percentages. By August or September, bees are usually more thorough about capping before the season ends.
What Happens If You Harvest Too Early
Harvesting too early is the most common beginner mistake, and it has real consequences. The honey will ferment or separate in ways that make it unusable or unpleasant.
Fermented honey develops a sour smell and taste, sometimes with visible bubbles or foam. It won’t hurt you, but it’s not what you wanted. Separated honey develops a layer of clear liquid on top and crystallized honey below—again, not dangerous, but not what you were aiming for.
The worst-case scenario is that you’ll lose the batch entirely. Fermented honey can’t be salvaged easily, and you’ll have wasted the bees’ work and your time.
The fix is simple: wait. If you’re uncertain, wait another week or two. Honey doesn’t go bad in the hive. It just gets riper. There’s no downside to being conservative on your first harvest. You’ll learn the timing quickly, and by your second or third season, you’ll have a feel for it.
