Why Honey Crystallizes (and How to Fix It)

Honey crystallizes naturally over time—it’s not a sign of spoilage or poor quality. Most raw and unfiltered honeys will eventually turn solid or grainy, while some types stay liquid for years. Understanding why this happens and how to reverse it (if you want to) is useful, though beginners should know that crystallized honey is perfectly safe to eat and requires no action at all.

The Science Behind Crystallization

Honey crystallizes because of its chemical makeup. Honey is mostly glucose and fructose—two different sugars with different properties. Glucose naturally wants to form solid crystals over time, while fructose stays liquid longer. The ratio of these two sugars varies by honey type, which is why some honeys crystallize quickly and others don’t.

Temperature also matters. Honey crystallizes fastest when stored between 50–70°F (10–21°C)—the range most home kitchens sit in. Temperatures above or below this range slow crystallization down. Raw and unfiltered honey crystallizes faster than processed honey because it contains pollen and other particles that give glucose crystals a place to start forming. This is actually a mark of quality, not a defect.

The size of the crystals affects texture. Fine, smooth crystallization feels creamy and spreadable. Large, grainy crystals feel rough. The speed of crystallization determines crystal size—slow crystallization produces larger crystals, while rapid crystallization produces finer ones. This is why some crystallized honey is pleasant to eat and some feels sandy.

Which Honey Types Crystallize Faster

Honeys high in glucose crystallize quickly. Canola honey, wildflower honey, and clover honey typically crystallize within weeks or months. Acacia honey and tupelo honey, which are high in fructose, may stay liquid for a year or longer. Blended honeys fall somewhere in between depending on their source flowers.

Raw honey crystallizes faster than pasteurized honey because heat and filtering remove particles that trigger crystallization. If you buy raw honey and it crystallizes in your pantry within a few weeks, that’s normal and expected—not a quality problem.

Local honey often crystallizes quickly because it’s usually raw and unfiltered. This is fine. Many beekeepers and local producers actually prefer selling crystallized honey because it’s less likely to ferment during storage and transport.

If you want honey that stays pourable for months, buy acacia or tupelo varieties. If you don’t mind or prefer spreadable honey, any type works. There’s no “better” option—it’s personal preference.

How to Safely Re-Liquefy Honey

If you want to turn crystallized honey back into liquid, warm it gently. The safest method is a warm water bath: place your honey jar in a bowl of warm water—around 110°F (43°C)—for 15–30 minutes. Stir occasionally. Avoid boiling water or direct heat, which can damage honey’s enzymes and flavor.

You can also place the jar in direct sunlight on a warm day, or near (not on) a radiator or heating vent. Patience matters more than speed. Slow warming produces better results than fast heating.

Never microwave honey in a closed jar—pressure builds and the jar can crack. You can microwave it in an open bowl in short 10-second bursts, stirring between each one, but a water bath is safer and easier to control.

Once honey is liquid again, it will eventually re-crystallize. You can repeat the warming process as many times as you want—it won’t harm the honey. Some people prefer to keep honey at room temperature in a warm kitchen to slow crystallization, or store it in a cool, dark cabinet and simply accept the crystallized texture as normal.

Whether Crystallization Means Honey Is Bad

Crystallized honey is not spoiled. Honey is naturally antimicrobial (meaning it resists the growth of bacteria and mold) and has an exceptionally long shelf life when stored properly. Crystallization is a physical change, not a chemical one—the honey is still good to eat, still safe, and still has the same nutritional value and flavor.

You can eat crystallized honey straight from the jar with a spoon. Many people prefer it this way—it’s like a creamy spread. You can also stir it into tea, oatmeal, or yogurt without re-liquefying it first. The crystals dissolve as the honey warms.

If you see mold, smell fermentation, or notice the jar leaking, those are actual signs of a problem. Crystallization alone is not.
