How to Make Sugar Syrup for Bees

Sugar syrup is the most reliable way to feed bees when natural food sources run short—typically in spring when they’re building up the hive, or in fall before winter. You don’t need fancy equipment or special ingredients. A pot, sugar, and water are enough to keep your bees alive through lean seasons.

Step 1: Choose the Right Ratio

The ratio of sugar to water matters because it affects how bees use the syrup and how quickly they can process it.

Spring feeding (when bees are raising brood and building comb): Use a 1:1 ratio by weight. This means 1 pound of sugar dissolved in 1 pound of water. A 1:1 mix is thinner and closer to nectar, so bees can use it quickly to draw out comb and feed larvae. If you prefer volume measurements, that’s roughly 2 cups sugar to 2 cups water (since 1 lb sugar ≈ 2 cups), though weight is more accurate.

Fall feeding (preparing for winter): Use a 2:1 ratio by weight—2 pounds sugar to 1 pound water. This creates a heavier syrup that bees can store more efficiently in their cells without it fermenting or spoiling. It also reduces the water content they need to evaporate before capping cells for storage.

Winter emergency feeding: Stick with 2:1. If you’re feeding in cold months, bees move slowly and can’t process thin syrup. A heavy syrup sits in the feeder longer without spoiling.

Don’t overthink this. Most beekeepers use simple kitchen scales or even eyeball it with a ratio of “about this much sugar to about this much water.” The bees aren’t fussy about precision—they just need the food.

White granulated sugar is the standard. Avoid honey (risk of spreading diseases like foulbrood), brown sugar (bees process it less efficiently), and anything with additives. Plain white sugar, period.

Step 2: Mix Without Scorching the Sugar

Scorching happens when sugar sits in a hot pot too long or the heat is too high. It doesn’t poison the bees, but it wastes your ingredients and creates a bitter taste they may reject.

The method:

  1. Pour your water into a pot and bring it to a gentle boil—you want steam rising, not a rolling bubble.
  2. Remove the pot from heat.
  3. Stir in your sugar slowly while the water is still hot but no longer actively boiling. The residual heat will dissolve the sugar without scorching it.
  4. Stir for 2–3 minutes until all granules are gone and the mixture looks clear.

That’s it. You’re not cooking anything; you’re just dissolving sugar in hot water.

If you have a lot of hives and make syrup regularly, some beekeepers use a large pot and low heat on the stove, stirring constantly. This works fine if you keep the temperature under control—aim for around 160–170°F if you have a thermometer. But honestly, the boil-and-remove method is simpler and less likely to go wrong.

Why not heat it longer? Heating sugar syrup beyond dissolving it serves no purpose for bees and only increases the risk of scorching or caramelization. Some old beekeeping books recommend boiling syrup to sterilize it, but modern research shows this doesn’t prevent disease transmission and wastes fuel.

You can add a tiny pinch of salt (less than 1/4 teaspoon per gallon) if you want—it mimics minerals in natural nectar—but it’s entirely optional. Don’t add vinegar, essential oils, or other “supplements.” Bees need sugar and water. Everything else is marketing.

Step 3: Cool Before Feeding

Hot syrup will damage the bees’ mouths and the feeder itself (if it’s plastic). Let it cool to room temperature before you put it in front of the hive. This takes 30 minutes to an hour depending on the volume.

You can speed cooling by pouring syrup into a shallow container or spreading it thin, but there’s no rush. Make your syrup in the afternoon, let it sit overnight, and feed in the morning. This also gives you time to think about whether your bees actually need feeding—a common beginner mistake is feeding when it’s not necessary.

Never feed hot syrup. Never.

Step 4: Storage and Shelf Life

Unused syrup: Store it in a sealed container at room temperature. A 1:1 ratio syrup will keep for several weeks but may ferment if left too long, especially in warm weather. A 2:1 ratio is more stable and can last months. If you see mold or smell fermentation, throw it out and make fresh.

How long does it last in the hive? Once bees take syrup from the feeder, they process it immediately. They either feed it to larvae, store it in cells, or consume it. There’s no “shelf life” concern once it’s in the hive—bees manage it.

Quantity: A typical top feeder holds 1–2 gallons. A frame feeder (an internal feeder that sits in an empty frame slot) holds about 1 quart. Make only as much as you’ll use in a week or two, especially in warm months.

Don’t stockpile syrup. Make it fresh as needed. It’s simple enough to batch every few days if you’re actively feeding.
